Stuffed Sweet Potato


When I first started the Paleo diet, I was really stoked on sweet potatoes. So stoked that I ate them way too much and got burnt out.  I decided to try them again today, and am really glad I did. This was so yummy.  Oh, and I have never been able to figure out the difference between a sweet potato and a yam.  I think this was actually a yam..  but I could care less either way, it was good 🙂

Stuffed Sweet Potato

Ingredients

  • 2 small to medium sweet potatoes
  • 1 1/2 to 2 cups sliced mushrooms
  • 1/2 cup sliced onion
  • 4 cloves garlic minced
  • 3-4 green onions chopped
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees.

  2. Puncture sweet potatoes with a knife several times. Bake them for about 45 min, or until they have reached desired softness. 

  3. While the sweet potatoes are in the oven (when they're almost done), sauté onion, garlic and mushrooms in a medium pan in about 2 Tbsp. of olive oil over medium-high heat. 

  4. Add salt and pepper and stir frequently, until onions are transparent and mushrooms have shrunk down. 

  5. When sweet potatoes are done, slice them down the middle. Scoop mushroom mixture into sweet potatoes and top with green onion.

Recipe Notes

If you want to get really crazy, try drizzling the finished product with pure maple syrup.
