Spring is here, which means fava beans are too! I am obsessed with fava beans – I’m not sure whether it’s their almost buttery texture, their abnormally large size, their shocking green color or a little bit of everything that draws me to them, but when I see fava beans at the farmers market, I charge the produce stand.
This toast recipe has spring vibes written all over it, and is absolutely perfect for a spring brunch party. Whether cooking for one or your entire brunch posse, this crunchy, buttery smooth, salty, nutty and sweet spring toast is a definite people pleaser.
Fun fact: I actually made mine on a rustic cinnamon-raisin sourdough, and it was amazing!(Don’t knock it till you try it!) 🙂



Fava Bean and Pesto Toast
Ingredients
- 1 slice of sourdough bread
- 1 tablespoon olive oil plus more to drizzle
- 2 tablespoons <a href=https://devourly.life/2019/04/12/parsley-cilantro-pesto/>pesto</a>
- 1/2 cup blanched fava beans with skins removed
- 1 tablespoon toasted pine nuts
- 1 tablespoon lemon juice
- Honey to drizzle
- Fresh black pepper to taste
- Red pepper flakes to taste
Instructions

Heat olive oil over medium heat in a medium pan.

Add sourdough slice and heat until slightly browned. Flip and repeat on second side. Remove from heat.

Spread pesto on toasted bread and top with fava beans, pine nuts, lemon juice, a drizzle of honey, a drizzle of olive oil, fresh black pepper and red pepper flakes.
Recipe Notes
I added a bit of pea tendrils for extra greenery and texture (they make for a beautiful food photo), but they aren’t necessary!
