One of the main things people tell me they would miss if they gave up animal products in their diet is cheese. As a former cheese whiz (no pun intended) I once felt the same way. To my surprise, I have found that most cheese alternatives actually taste so much better than actual dairy. These alternatives also have awesome health benefits and, of course, don’t involve harming or using animals!
I’m warning you now – this “cheese” sauce might turn into an addiction. It’s so creamy, rich and full of flavor, you’ll want to use it on everything. Mac & “cheese”, “cheesy” polenta, roasted veggies with a “cheese” drizzle, “cheesy” veggie burgers – your cheese-covered options are endless!
• 1 small sweet potato chopped
• 1 small carrot chopped
• 1/2 yellow onion chopped
• Juice of 1/2 a lemon
• 1/4 cup coconut cream
• 2 heaping tablespoons nutritional yeast
• 1/4 cup hulled hemp seeds (hemp hearts)
• 1/8 tsp smoked paprika
• 2 garlic cloves
• 1 tsp sea salt
• 3/4 cup cooking water
1. Heat a small pot of water to boiling. Add chopped veggies. Reduce to a simmer and cook until soft.
2. While veggies are boiling, add remaining ingredients to a blender. When veggies are done cooking, set aside 3/4 cup of the cooking liquid. Add it to the blender along with the cooked veggies.
3. Blend until smooth.
4. Pour over your favorite pasta (or any roasted veggie) and enjoy.
