I recently fell in love with Moon Juice, and have pretty much been addicted to their products since trying the first one. I’m currently using the Moon Juice Brain Dust, and put it in my smoothies/smoothie bowls every day. This Brain Dust contains Lion’s Main mushroom extract powder (along with several brain-supporting herbs), which is beneficial for cognitive support.

Coconut is also known to be helpful for cognitive support. Coconut contains medium chain fatty acids (MCFAs) that go through a more simple digestion process than other plant-based fats. When medium chain fatty acids are digested, ketones are produced, which can be instantly used by the brain for energy.

Coconut Cashew Cacao Brain Balls

Ingredients

• 1 1/2 cup shredded unsweetened coconut
• 2/3 cup cashew flour (to make your own, blend cashews in food processor until finely-ground)
• 3 Tablespoons honey
• 1 Tablespoon blackstrap molasses
• 2 Tablespoons coconut butter
• 1 Tablespoon coconut oil
• 1/4 cup cacao powder
• 1/2 tsp vanilla extract
• 1/8 tsp sea salt
• 2 tsp Moon Juice Brain Dust
• 2 tsp bilberry powder (optional)

Directions

1. Preheat oven to 200 degrees Fahrenheit.
2. Line a cookie sheet with parchment paper.
3. Add all of the ingredients to a food processor.
4. Pulse on hight until well-blended and the mixture starts to clump together.
5. Press mixture into 1 inch-wide balls and place on prepared cookie sheet.
6. Bake for 10 minutes.
7. Turn off the heat but leave cookies inside for 15 minutes.
8. Remove from oven and let cook completely. Sprinkle with Brain Dust and bilberry powder.
7. Store on counter in air-tight container.
